Polenta Pizza with Pesto Sauce
Entree Ingredients (Two Servings)
½ box Fantastic Foods Polenta
1 cup water
1 TB earth balance
seasoning to taste
Steamed Carrots and Asparagus
Grated cheddar cheese for garnish
Fresh Pesto sauce, green or red
1TB Earth Balance
½ tsp. lemon juice
1tsp. water
1 TB no-chicken powder
½ pesto sauce
Preparation
Add Polenta mix to cold water and earth balance and bring to simmer.
Cook until thick. Pour into small flat greased dish and let cool.
Cut into 6 serving pieces.
Add ½ tsp pesto sauce to each slice of polenta and spread.
Sprinkle with grated cheddar cheese.
Steam carrots and asparagus.
Pesto Butter-Lemon Sauce
Combine Earth Balance, lemon juice, water and no-chicken powder and heat to blend.
Stir well.
Serve
Arrange polenta and vegetables on serving plate.
Drizzle Pesto Butter-Lemon sauce over vegetables.
Serve with extra sauce.
