Hearty Lentil Soup


Ingredients (Two Servings)

        Lentil soup mix, Mayacamas      
        ½ Veggie cube, or ½ tsp. Veggie seasoning                                
        3 TB diced red onion                 
        ½  stalk celery, sliced
        2 TB sunflower oil
        1 carrot chopped                                                                       
        Lemon juice to taste
        1 TB. Butter
        1 small red potatoes, cut in cubes
        2 cups water

Preparation

        Add chopped onion and celery to oil and saute’ until light brown. 
        Add the cubed potatoes and continue to heat.  
        Stir frequently until some of the cubes are light brown.
        
        In a separate bowl, combine 1 pkg. of soup mix and 1 cup water.  
        Stir well.  
        Add  Veggie seasoning, 2 TB. butter, squeeze of fresh lemon juice. 
        Stir and keep heat on low until lentils are cooked, about 10 minutes. 
        
        Lightly steam carrots and add to soup when done cooking.
        
        Refrigerate.
        
        Serving: Heat the desired amount in saucepan and serve hot.
